Slow Cooker Lamb Curry
Equipment
- 1 Slow Cooker
Ingredients
- 3 Onions thinly sliced
- 3 tbsp Madras curry paste
- 2 tin Chopped Tomatoes 400g
- 2 Vegetable Stock Cubes mixed in 200ml water
- 1 tin Chickpeas
- 1 tbsp Grated ginger
- 2 tsp Cumin Seeds
- 1 Cinnamon Stick
- 150 g Curly Kale
- 300 g Lean Lamb Steaks diced
- Double Cream to serve
- Fresh Coriander to serve
Instructions
- Put all the ingredients into the slow cooker pot and stir well.
- Cover with the lid and cook on low for 6 hrs until the lamb is tender. Serve with double cream and chopped coriander.
- Serve with Brown Rice and Mango Chutney
