Why We Love This Recipe

Ever have those moments when you’re craving chocolate, but you’re not quite sure what form it should take? That’s exactly when these Chocolate Chip Brownies come to the rescue. Rich, chewy, gooey in the middle and crisp on the top—these are everything a brownie should be.

And the best bit? They’re super easy to make and ready in just about 40 minutes. Whether served warm with a scoop of ice cream or sliced up for lunchboxes, they’re guaranteed to satisfy.

Why This Dish Works on a Budget

With just a few cupboard staples—flour, cocoa powder, sugar, eggs, and chocolate chips—you can whip up a batch without running to the shops. It’s a brilliant way to make something indulgent without breaking the bank, especially when you’ve got a family to feed.

Plus, one batch went a long way! We had enough for dessert at home, packed lunches for the kids, and even a few slices left for me to take to work.

Will You Be Trying It?

We made these to celebrate World Chocolate Day on the 7th of July 2025, and let’s just say—they didn’t last long. The kids were eyeing them up before they’d even cooled, and my workmates; Gone before our Monday meeting had even started.

If you’re after something that pleases a crowd with minimal effort, these brownies are a guaranteed win.

Fudgy Chocolate Brownies with Milk Chocolate Chips

These rich, gooey brownies are the ultimate chocolate lover’s treat – made with real dark chocolate, a generous helping of cocoa, and packed with melty milk chocolate chips. Perfect for lunchboxes, after-school snacks, or a quick dessert with a scoop of ice cream!

Cost: 42p each

Ingredients

  • 200 g dark chocolate 70% cocoa or higher
  • 200 g unsalted butter
  • 4 medium eggs
  • 250 g caster sugar
  • 100 g plain flour
  • 50 g cocoa powder
  • 200 g milk chocolate chips

Instructions

  • Preheat your oven to 180°C (160°C Fan) and line a 9-inch square tin with baking parchment.
  • Break the dark chocolate into pieces and melt it together with the butter in a heatproof bowl over a pan of simmering water (or in short bursts in the microwave). Once melted, set aside to cool to room temperature.
  • In a separate bowl, whisk together the eggs and caster sugar with an electric whisk until the mixture is pale, thick, and doubled in volume. You’ll know it’s ready when the mixture leaves a trail for a second or two when you lift the whisk.
  • Gently pour the cooled chocolate mixture into the whisked eggs and fold together using a spatula – go slowly to keep the mixture light and airy.
  • Sift the flour and cocoa powder over the chocolate mix and fold it in gently until fully combined.
  • Fold in the milk chocolate chips, then pour the batter into your prepared tin and level the top.
  • Bake for 20–25 minutes, or until the top is set with a slight wobble in the middle – this gives that perfect fudgy centre.
  • Leave the brownies to cool completely in the tin before slicing into 16 squares.
  • Enjoy these brownies on their own with a cuppa, pop them into lunchboxes, or warm them slightly and top with your favourite ice cream for a quick dessert. They’re also amazing chilled from the fridge for extra fudgy texture!
