Good Food. Less Waste. Smarter Shopping.
Feeding a family on a budget doesn’t mean eating the same meals every week or spending hours planning what to cook.
The 4-2-1 Method is my simple approach to organising seven evening meals: four freshly cooked dinners, two easy meals and one treat night.
It’s about making the most of your ingredients, reducing food waste and keeping your weekly shopping bill under control — while still enjoying food everyone looks forward to.

4 Freshly Cooked Meals
These are the four meals you plan to cook from scratch during the week. Think hearty family favourites, comforting one-pot dinners, curries, pasta dishes and homemade fakeaways.
The aim isn’t to cook expensive or complicated meals. It’s to choose dishes that make good use of affordable ingredients, share ingredients where possible and provide satisfying portions without stretching your food budget.
2 Easy Meals
Not every evening needs a full cooking session. That’s why I build two easy meals into the weekly plan.
These might be leftovers from an earlier dinner, something prepared in advance or a quick family favourite that takes very little effort to put together.
The idea is to give yourself a couple of easier evenings while making the most of the food you’ve already bought. It’s a simple way to save time, reduce waste and avoid the temptation of an expensive last-minute takeaway.
1 Treat Night
Every week deserves something to look forward to, and eating on a budget shouldn’t mean giving up the meals you love.
Treat night could be homemade pizzas, a Friday-night curry, burgers and chips or even a takeaway if your budget allows.
The important thing is that it’s planned rather than an unexpected expense. By including a treat in your weekly meal plan, you can enjoy a little flexibility without undoing the savings you’ve made throughout the week.
What Does a 4-2-1 Week Look Like?
Here’s an example of how you could organise seven evening meals using the 4-2-1 Method. The days aren’t fixed — move meals around to suit your family’s routine, what you have in the fridge and how much time you’ve got to cook.
| Day | Evening Meal |
| Monday | Chicken Curry with Rice – Fresh |
| Tuesday | Spaghetti Bolognese – Fresh |
| Wednesday | Left Over Bolognese Jacket Potatoes – Easy |
| Thursday | Sausage and Vegetable Traybake – Fresh |
| Friday | Homemade Burger and Chips – Treat |
| Saturday | Creamy Chicken Pasta – Fresh |
| Sunday | Cheesy Beans on Toast – Easy |
