Ingredients
300gporridge/rolled oats
150gunsalted butter or baking spread
150gbrown sugar
4tbsphoney
100gdried cranberries & Raisins
20galmond flakes
Instructions
Preheat & Prepare
Heat oven to 200°C / 180°C fan / Gas 6. Line a 20 x 20cm square baking tin with parchment paper.
Make the Syrup Base
In a saucepan, melt together the butter, brown sugar, honey, and a pinch of salt. Stir until bubbling and fully combined.
Mix in the Goodness
Take off the heat, then stir in the oats, cranberries, and raisins until well coated.
Bake the Bars
Tip the mixture into your prepared tin and press down firmly with the back of a spoon to even it out. Scatter over the almond flakes. Bake for 20 minutes until golden at the edges.
Cut & Cool
Remove from the oven and leave for about 5 minutes. While still warm, cut into 12 bars (or larger squares if you prefer). Leave to cool completely in the tin before lifting out and transferring to an airtight container.
Notes
For extra crunch, toast the almonds lightly before sprinkling on top.
Swap the cranberries & raisins for apricots, cherries, or mixed seeds to mix things up.
These bars keep well in an airtight tin for up to a week – perfect for batch prep!
