Cranberry, Raisin & Almond Granola Bars

These Chewy Granola Bars are so delicious! Sprinkled with almond flakes, they are a perfect snack with a cup of tea or even as breakfast on the go!

Ingredients

  • 300 g porridge/rolled oats
  • 150 g unsalted butter or baking spread
  • 150 g brown sugar
  • 4 tbsp honey
  • 100 g dried cranberries & Raisins
  • 20 g almond flakes

Instructions

Preheat & Prepare

  • Heat oven to 200°C / 180°C fan / Gas 6. Line a 20 x 20cm square baking tin with parchment paper.

Make the Syrup Base

  • In a saucepan, melt together the butter, brown sugar, honey, and a pinch of salt. Stir until bubbling and fully combined.

Mix in the Goodness

  • Take off the heat, then stir in the oats, cranberries, and raisins until well coated.

Bake the Bars

  • Tip the mixture into your prepared tin and press down firmly with the back of a spoon to even it out. Scatter over the almond flakes. Bake for 20 minutes until golden at the edges.

Cut & Cool

  • Remove from the oven and leave for about 5 minutes. While still warm, cut into 12 bars (or larger squares if you prefer). Leave to cool completely in the tin before lifting out and transferring to an airtight container.

Notes

  • For extra crunch, toast the almonds lightly before sprinkling on top.
  • Swap the cranberries & raisins for apricots, cherries, or mixed seeds to mix things up.
  • These bars keep well in an airtight tin for up to a week – perfect for batch prep!
