These Nutella banana muffins are sumptuous, moist and have an untimely deliciousness that will keep you coming for more.
These were actually made on world Nutella day, 5 February 2017, as I always try and make recipes that coincide with events that have happened or upcoming.
This also gave me an excuse to get baking with my kids again, a favourite pastime of ours. I mean what else can make one father happier than my kids getting as excited as I do while cooking, yet the ultimate satisfaction is seeing their little faces when they munch away on their little creations.
For this recipe, however, it was based around a banana bread with chocolate chips that we made many, many Sundays ago and was an absolute hit with everyone. You ask if all we make are hits, well they mostly are but our biggest test is the mum. Now my wife actually is not the biggest fan of bananas but loved our banana bread.
So in the kitchen, we went, including a little stool for my little man so he can reach the table top. It may be pink but it has done well for two out of three kids and he don’t mind as it also plays as the leverage to be able to turn our bedroom light on at daft o’clock in the morning
The actual recipe that I had tested, changed and finalised was adapted from one found on thecotswoldguide.co.uk and was actually for a banana loaf.
I decided on these muffins as I know they would retain their ultimate moistness and with the idea of adding Nutella buttercream, the soft texture and intense flavour of Nutella could not be as close to divine as I could imagine. The buttercream was adapted from wickedgoodkitchen.com and really did make these muffins amazing. I really like the very mild saltiness the cream cheese brings to the buttercream especially against the smooth chocolate and nuttiness that comes with Nutella.
The ultimate test was my wife however as she is currently on a new fitness and eating regime they were not on her list of foods, although I do know that she wanted one badly but resisted the urge so a big well done to my awesome wife.
Did they pass the kid test, of course, and they also passed the work test as I took some in for my work colleagues.
