Lamb Kofta and Mint Yoghurt Dressing

Lamb Kofta
- 500 g Lamb mince
- 1 red chilli
- 1 white onion peeled and roughly chopped
- 2 Garlic cloves
- 1 tbsp. fresh mint
- 1 tsp. Ground cumin
- 1 tsp. Dried thyme
- 1 tsp. Light brown sugar
- Olive oil for frying
Mint Yoghurt Dressing
- 100 g 0% Fat natural yoghurt
- 1 tbsp. fresh mint finely chopped
- ½ lemon juiced
Put the red chilli, onion, garlic and mint into a food processor and pulse into fine dice. In a large bowl add the lamb mince, cumin, thyme sugar and fine-diced ingredients. Mix together with your hands, season with salt and pepper and shape in to 8 even sausage style shapes. Place on a plate and refrigerate for at least 30 minutes.
Heat a griddle pan or non-stick frying pan over a medium heat. Take out the koftas and brush with a little olive oil. Place the koftas in to the pan and cook for 10-15 minutes turning frequently but allow a nice golden brown colour to form before turning.
While the koftas are cooking mix the yoghurt, mint and lemon juice in a bowl and place to the side.
