Simple Chicken Caesar Salad

A simple yet beautiful Chicken Caesar Salad for any meal.

Ingredients

  • 75 g Pancetta
  • 2 in chicken breasts cut in half lengthways
  • 1 tbsp. olive oil
  • 1/2 lemon juiced
  • Salt
  • Pepper
  • 1 tbsp. White wine vinegar
  • 1 Little gem lettuce washed and roughly chopped
  • 1 Tomatoes quartered and then halved
  • 1/2 red onion finely sliced
  • 50 g Croutons
  • 30 g Parmesan grated
  • 100 ml Caesar Dressing

Instructions

  • Mix the chicken breasts with the oil and lemon juice and set to the side for 10 minutes. Heat a frying pan over a medium to high heat then cook the pancetta without any oil until crispy and a golden brown, remove onto a plate with a little kitchen paper to absorb any excess oil that comes from the pancetta.
  • In the same pan lower the chicken and fry for 3 minutes on either side until a nice golden colour and seasoning each time. At this point add the white wine vinegar and allow the liquid to almost disappear and remove the chicken to a plate to rest for a few minutes.
  • While the chicken rests, in a bowl mix the lettuce, tomatoes, onion, pancetta and croutons with half the Parmesan and Caesar dressing.
  • Place the salad onto a plate and lay the chicken on top and cover with the remaining dressing and then more Parmesan.

Notes

If you want to add all of the dressing and parmesan to the salad at stage 3 then this is just as good.
