Nutella Banana Muffins

These Nutella banana muffins are sumptuous, moist and have an untimely deliciousness that will keep you coming for more.

Ingredients

Nutella Banana Muffins

  • 4 Small bananas old bananas are best
  • 150 g Butter softened
  • 150 g Plain Flour sifted
  • 1 tsp. baking powder
  • 1 tsp. Bicarbonate of Soda
  • 2 Large eggs
  • 150 g Light brown sugar
  • 75 g Nutella
  • 2 tbsp. milk

Nutella Frosting

  • 200 g Unsalted Butter softened
  • 100 g Cream cheese
  • 100 g Nutella
  • 2 tsp. vanilla extract
  • 2 tbsp. cocoa powder
  • 400 g icing sugar
  • 12 Banana crisps / chips

Instructions

For the Muffins

  • Preheat the oven to 160C. In a large bowl mash the bananas with a fork of potato masher until soft and gooey. Add the butter, flour, baking powder, bicarbonate of soda, eggs and sugar to a large mixing bowl and whisk until light and fluffy. Add the mashed bananas and set to the side.
  • In a small pan gently heat the Nutella and milk until smooth and slightly runny. Add this to the muffin mix but don’t stir too much as you want the slight marble effect.
  • Divide the mix between 12 muffin cases in a muffin tray and bake for 18 to 20 minutes until risen and a skewer comes out clean once inserted.
  • Leave to cool completely in the tray before frosting.

For the Nutella frosting

  • With an electric whisk mix the butter and cream cheese until incorporated then whisk in the Nutella and vanilla extract.
  • Sift in the cocoa powder and icing sugar and carefully mix with a spoon. Once well mixed give it a final whisk with the electric whisk until smooth.
  • The mix is ready to pipe straight away or can be put in the fridge until slightly firmer. Once happy use a piping bag and a nozzle of your choice, fill and pipe in a nice swirl on top of each muffin.
  • Top with a banana crisp and serve with a lovely cup of tea.
