Don’t you just love the chance of making food for the family in less than 30 minutes? These opportunities are not always available with a family unless freezer food is the only option. Now a good old freezer surprise isn’t always too bad.
But…we are not here to talk about freezer food…. we are here to talk about these lamb kofta that have a spice to them that really brings out the lovely mellow flavours of the lamb. The thyme and little sugar add a bit of sweetness that can bring down the heat of the chilli if you have chosen a hot one, but I like the heat the chilli and cumin brings.
So try this yourselves when you have only a short window to cook dinner. You can even use beef mince if lamb is not available.
Serving is simple and adds only a little time to the dinner. Commonly served with a warmed pitta and salad try serving with either minted slaw or even red cabbage slaw to add a slightly healthier twist.
